2-1/2 Cups Pinto Beans
1/2 lb. salt pork, bacon, or ham, diced
1 medium onion, sliced thin
1 diced green or red pepper
2 Cups hot water
1/2 Cup brown sugar
1/2 tsp. baking soda
2 tsp. dry mustard
1 tsp. salt
1/2 tsp. black pepper
1/2 cup molasses
1/2 tsp. caynne pepper
1 Tbsp crushed red pepper
Wash beans thoroughly (3 times). Cook in pressure cooker 1 hour or until done. Place pork, bacon, or ham into bean pot. Add beans, onions, and diced pepper and mix well. Mix remaining ingredients in the 2 cups of hot water. Pour over beans. Place covered pot into 325 degree oven for 5 hours. During baking, add hot water as needed to prevent drying.
